Quinoa and vegetable mix

I hadn't cooked in a while but I've been able to change that recently. I made of mix of quinoa and vegetables. It is so simple to make and you can find all the ingredients easily.
Good food, a book and some juice make up a good weekend ;)

Cooking time : 40 minutes
A lot of this time would go into cleaning and chopping the vegetables.

Ingredients:
- Quinoa
- Canned red beans
- Carrots
- Green beans
- Bell peppers
- Onions
- Tomatoes
- Salt
- Curry powder
- Thyme
- Olive oil 
- Cucumber

 Method of preparation:
- Chop up all ingredients
- Heat olive oil in a pan then put the onions in, toss in the bell pepper then the green beans, tomatoes then carrots. Stir fry for just a few minutes. I like my vegetables crunchy so I didn't leave it on for long.
- Heat water then rinse the quinoa with it.
- Depending on how long the quinoa should be cooked for, cook until it is close to ready then pour in the stir fry, drain water from the beans and add, then stir together and season with salt, curry powder and thyme. I used little seasoning as I like the natural flavour from the vegetables. If you are one who prefers heavy seasoning, feel free to season to your taste. 
- Allow to simmer for 5 minutes and it should be ready. Allow to cool and just before eating, garnish with cucumber.
