Yam Porridge

If you aren't Nigerian and are yet to try this dish, please hurry.... It's none other than yam porridge.

Ingredients:
- Yam
- Palm oil
- Tomato purée
- Pumpkin leaves (ugwu)
- Spring onion leaves
- Onions
- Dried fish or meat (optional)
- Crayfish
- Seasoning cubes
- Salt
                             I like to cut the yam into bite size cubes                          Spring onions leaves

Method of preparation:

- Peel the yam and cut into bite size cubes
- Cut the leaves (you can use pumpkin leaves or spring onion leaves, or both)
- Soak the fish in hot water then break into the size you might like and wash in warm salty water (to clean properly)
- Heat the palm oil in a pot, put in onions, then the tomato purée
- Fry the ingredients for about 5 minutes
- Season with crayfish, salt and seasoning cubes
- Add water and allow to boil
- Put the yam in
- After about 8 minutes, put the fish in then the leaves
- Allow to cook for about 5 - 7 minutes
- Take off heat, stir and food is ready!
