Pork, pasta and vegetable stir fry

For the next four weeks, I'll post a recipe and see how much interest there is in this. My sister and a friend have told me that I cook regularly enough and enjoy doing it so I might as well write about some of the dishes...

Last weekend, I walked into a supermarket with my sisters to buy a certain item but could not find it. I wasn't prepared to leave empty handed so I dashed to the meat section and I left with a good deal, pork shanks happened to be the item of the day!

As we had veggies at home and some pasta, I decided to make a stir fry with these ingredients.

So the ingredients I used were:
- pork shanks
- onions
- garlic
- carrots
- green beans
- green bell peppers
- seasoning cubes
- turmeric
- salt
- curry
- thyme
- olive oil
The amount of ingredients you use will determine how many people you are cooking for. I cooked for seven.



Method
Season the pork to your taste, boil for 10 to 15 minutes with little water then drain.

Pork shanks
To season, I used onions, 3 seasoning cubes, salt, curry and thyme
Boil the pasta with salt till al dente
Chop up the vegetables
Chop pork into chewable sizes after boiling

Pasta, carrots, green beans, green bell pepper, onions and garlic and pork shanks

Put a small amount of olive oil in the pan, pour in the pork in, next the green beans, then the green pepper, then carrots, onions and finally the pasta. Keep stirring while you add each ingredient in. I didn't need to spice as I ended up using the broth from the pork for some moisture. The seasoning in the broth was fine but feel free to add more seasoning if need be.

The last thing I added just before taking it down was turmeric...
Turmeric made a difference and it's ready
Stir for 2 minutes then remove from heat. I like my vegetables crunchy so I wouldn't leave it longer but if you prefer it otherwise, leave as long as you deem fit.

Dinner is served
The next time I make this dish, I'll roast instead.

I was saying to myself after your last post that I'm going to nag you for recipes that didn't include baking, I can't fit an oven into my kitchen for now, which means baking might be a very big challenge. Lol. So thank you for this, will definitely try it out! :-) Forgive my ignorance, please what's the local name for tumeric? Can I get it in the local market or it has to be off the shelf? Efua

  4. Sooooo.. I tried the veggies and pasta dish! The result? Absolutely wonderful! I truly wish I could post the photo. Anyway, I swapped the pork for beef (I'm not a fan of pork), and I didn't use "tumeric". Still, the end result was impressive! Thanks Ene, looking forward to trying out more recipes..
